About the Recipe
Prepare all 5 salad jars at once and rest easy knowing that your lunches are all set for your busy week ahead.

Ingredients
DRESSING
3/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 tsp salt
1/4 tsp dried oregano
SALAD JAR LAYERS
1 cup red cabbage, thinly sliced
1 cup quinoa, cooked
4 cups lettuce, washed, dried, chopped
1 cup dried pitted prunes, chopped
1/2 cup walnuts, chopped (optional, toast the walnuts to deepen their flavour)
Preparation
Step 1
In a small bowl, whisk the dressing Ingredients together and divide evenly into 5 16-oz canning jars or containers.
Step 2
Divide the salad jar ingredients evenly between each jar In the order In which they are written above.
Step 3
Refrigerate jars until ready to enjoy. Before serving give the jar a good shake to let the dressing coat the ingredients. Eat directly from the jar or pour out onto a plate to serve. Salad jars will stay fresh for up to 7 days.
